Parmesan Crusted Pork Chops
Tender forest-raised pork chops get coated in crispy parmesan and pan-fried to golden perfection. The crust adds incredible flavor and texture while keeping the meat juicy inside. Serve alongside creamy mashed potatoes made with real butter and raw milk, plus fresh green beans sautéed with garlic. This is the kind of wholesome dinner that brings everyone to the table. It comes together in under an hour using simple ingredients you probably already have. Pure, satisfying comfort food that turns ordinary weeknight cooking into something the whole family will request again and again.

  1. Season the Chops: Season both sides generously with sea salt.
  2. Prep the Coatings: You will need two shallow dishes. In dish 1, whisk the 2 pastured eggs until frothy. In dish 2, combine the 1 cup of Panko, 1 cup of Parmesan cheese, and 1 Tablespoon of Italian seasoning. Mix well.
  3. Coat the Pork Chops (no flour needed!): Dip one pork chop completely into the egg wash (dish 1), allowing any excess to drip off. Immediately transfer the chop to the crumb mix (dish 2). Press the crumbs firmly onto both sides to ensure a thick, even crust. Place the coated chops on a plate or wire rack.
  4. Sear the Chops in Your Cast-Iron: Place your large 14" cast-iron skillet over medium-high heat. Add the 4 to 6 Tablespoons of Beef Tallow. Allow it to melt and get shimmering hot. Carefully place the coated pork chops into the hot tallow. You should be able to fit all four in your large skillet. Sear for about 3–5 minutes per side until the crust is golden and the internal temperature of the pork reaches 145F. 
  5. Transfer and Rest: Transfer the cooked chops to a clean plate and let them rest for 5 minutes before serving.

  2. About Searing: Using this amount of tallow in your large 14" cast iron skillet creates a shallow layer of hot fat, which is key for even searing and ensures the Panko/Parmesan crust becomes perfectly golden brown and crispy.
