Esta's Bacon Wrapped Chicken
You wrap chicken breasts in bacon, season them, and bake until the bacon gets crispy and the chicken stays juicy. It's simple but it feels a little special. The bacon keeps everything moist and adds so much flavor. Esta usually serves it with roasted vegetables or a salad, and the kids always clean their plates.

Ingredients

  • (2 packs / 4 breasts) Boneless Skinless Chicken Breast
  • (8 slices) Smoked Uncured Bacon
  • (1/4 cup) Brown Sugar
  • (2 teaspoons) Smoked Paprika
  • (1/2 teaspoon) Garlic Powder
  • (1/4 teaspoon) Onion Powder
  • (1/2 teaspoon) Black Pepper
  • (1/2 teaspoon) Sea Salt
  • (1 Tablespoon) Chopped Parsley - optional for garnish

Directions

  1. Preheat your oven to 375°F.
  2. Mix the seasoning. In a small bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Season the chicken. Rub about half of the spice mixture all over the chicken breasts, coating them evenly.
  4. Wrap in bacon. Wrap each chicken breast with 2 slices of bacon, overlapping slightly. Place them seam-side down in a baking pan or oven-safe skillet so the bacon stays in place.
  5. Add more seasoning. Sprinkle the remaining brown sugar mixture over the top of the wrapped chicken.
  6. Bake. Put the pan in the oven and bake for 25-30 minutes, basting the chicken occasionally with the pan drippings. The chicken is done when the bacon is crispy and the internal temperature reaches 165°F.
  7. Optional: Broil for extra crispy bacon. If you like your bacon really crispy (and who doesn't?), turn on the broiler for the last 1-2 minutes. Watch it closely—the sugar in the seasoning can burn fast.
  8. Garnish and serve. Sprinkle with fresh parsley and serve hot.

Notes

  • Make sure your chicken breasts are similar in size so they cook evenly.
  • Don't use thick-cut bacon. It takes too long to cook and your chicken will dry out.
  • The pan drippings are gold. Spoon them over the chicken while it bakes and again when you serve it.
  • Sides that work great: Roasted vegetables, mashed potatoes, green beans, or a simple salad.
