An old-fashioned favorite for rich, nourishing broth. Full of naturally occurring collagen, they make a beautiful, gelatinous stock worth keeping in the freezer.
We like to turn chicken feet into a rich, gelatinous bone broth. Simmer them in a stockpot with onion, carrots, celery, garlic, fresh herbs, and a splash of apple cider vinegar for several hours, then strain and chill. Once cold, the broth should set up beautifully.
Sip it warm by the mug, use it as the base for soup, or pour it into ice cube trays and freeze for adding a little extra goodness to sauces, rice, and gravies.

Thaw in the fridge for 24–48 hours, or quick-thaw in a bowl of cold water for 2–3 hours. Once thawed, use within 2–3 days.
