Easy BBQ Chicken Quarters
This BBQ chicken is simple, flavorful, and perfect for grilling season. Chicken legs and thighs get coated in a savory spice rub, grilled until crispy, then brushed with your favorite BBQ sauce. The dark meat stays juicy and tender, and the skin gets that perfect char. It's the kind of recipe you'll make all summer long.

Ingredients

  • (2) Chicken Legs & Thighs
  • (1 Tablespoon, blended) Your Favorite Spices
  • (3/4 cup, optional) Your Favorite BBQ Sauce

Directions

  1. Pat the chicken leg quarters dry. For the best flavor, give them a quick rub with your favorite spices (or let them sit in a simple marinade for 30 minutes before grilling).
  2. Place the chicken on a medium-hot grill. Cook, flipping occasionally, to ensure the skin gets crispy without burning.
  3. If you’re using a BBQ sauce, wait until the last 10–15 minutes of cooking to brush it on. This prevents the sugars in the sauce from charring too quickly.
  4. Continue grilling until the internal temperature reaches 165°F. It should take around 30-45 minutes.
  5. Let the chicken rest for 5 minutes before serving for a juicy, easy farm-style dinner.

Notes:

  • A spice rub blend is so easy to make at home. Here's what we tend to use: 1 tablespoon paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon sea salt, 1/2 teaspoon black pepper, 1/2 teaspoon dried thyme, and 1/4 teaspoon cayenne pepper (the last one is optional - use it if you like a little heat).
  • The key to great grilled chicken is patience and care. In other words, watch that grill! You want fully cooked but not burnt chicken.
