Directions

  • Slice chicken into ½-inch strips.
  • In a medium bowl, mix together marinade ingredients.
  • Add chicken and toss with marinade. Let stand for 30 minutes.
  • Melt butter in skillet. Add onions and bell peppers. Sprinkle with salt and pepper.
  • Sauté until tender. Remove from skillet.
  • Add chicken with marinade to skillet, cover, and cook on medium heat until just done.
  • Return bell peppers and onions to the skillet and simmer, uncovered, for a few minutes. (If it's still really juicy, cook on high until juices reduce.)
  • Use tongs to place mixture in tortillas and top with toppings of your choice. The possibilities are endless!

  • 8 boneless, skinless chicken thighs
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1 green bell pepper, sliced salt and pepper
  • 6-10 (10-inch) flour tortillas

Marinade

  • 1 jalapeño pepper, sliced
  • 2 garlic cloves, minced or crushed juice of 1 lime ¼ cup olive oil 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt
