This oven-roasted eye of round roast is infused with aromatic seasonings and a hint of beefy flavor for a mouthwatering meal that you'll want to make again and again!


  • 1 3 lb Eye of Round roast
  • 2 tablespoons melted butter
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 cup beef stock or broth


  1. Preheat oven to 325°F.
  2. Rub the roast with melted butter and seasonings, making sure all sides are covered.
  3. Place the roast in a roasting pan and add the beef stock or broth.
  4. Roast uncovered for 1 hour 45 minutes to 2 hours 15 minutes, depending on desired doneness (145°F for medium rare, 160°F for medium).
  5. Let stand for 10 minutes before slicing against the grain. Enjoy!
