Einkorn is a heritage grain. It's kinda like all flour used to be before it was hybridized and heavily processed by our modern industrialized food system.

Compared to modern wheat, einkorn packs more nutrition and is more digestible. It contains gluten AA, which is a completely different kind of gluten. Some people with gluten intolerance can handle einkorn but not conventional wheat.

Storage

Store in an airtight container in the pantry for 3-12 months. Or, to extend shelf life, you can store in the freezer for 1+ years.
