Raw Honey Panna Cotta

This recipe is simple and comes together fast. Raw cream gives you the best flavor and nutrition, but regular cream works too. Want to switch it up? Stir in an egg yolk for richness, swirl in some berry puree, or add fresh mint. However you make it, it's a real treat.

Ingredients
- (4 cups) Raw Double Heavy Cream, 1 Pint in Glass (WV ONLY)
- (1/4-1/2 cup) Raw Honey, 1lb
- (4 tsp) Gelatin
- (1 Tbsp) Vanilla
Directions
- Put the cream and honey in a small pan and warm it. You want to dissolve all that honey into the milk. Make sure to heat it to no more than 110F (we want to retain all those wonderful properties of raw cream and honey).
- Sprinkle the gelatin on top, and give it a quick stir. Let sit for 5 minutes to let the gelatin dissolve and bloom.
- Add the vanilla, stir, and pour the mixture into ramekins, small bowls, or little mason jars.
- Cover and chill till firm, about 2-3 hours.
- Serve and enjoy!
Feel free to drizzle some more honey over top, too. Or add sliced or pureed fruit, jam, almonds, or whatever your heart desires.
