Einkorn Chocolate Chip Cookies

These classic chocolate chip cookies are made with ancient einkorn flour that's easier to digest than modern wheat. They're crispy on the edges, soft in the middle, and packed with rich chocolate chips. Perfect for after-school snacks, holiday gatherings, or anytime you want a treat that tastes amazing and uses simple, wholesome ingredients your great-grandmother would recognize.

Ingredients
- (3/4 cup) Raw Unsalted Butter for Cats & Dogs, 1lb
- (3/4 cup) Light Brown Sugar
- (1/2 cup) Dark Brown Sugar
- (2 eggs) 1 dozen - Pastured Corn & Soy Free Eggs
- (3 cups) 2lb - Einkorn Flour
- (2 teaspoons) Vanilla Extract
- (1-1/2 teaspoons) Sea Salt
- (1 teaspoon) Baking Soda
- (1/2 teaspoon) Baking Powder
- (1-1/2 cup) Semi-Sweet Chocolate Chips
- (A pinch - optional for topping) Flaky Sea Salt
Directions
- Preheat the oven to 350°F. Line a large baking sheet with parchment paper or a silicone baking mat.
- Using a stand mixer fitted with the paddle attachment or hand beaters, beat together the butter and both sugars until fluffy, 2-3 minutes. Scrape down the sides of the bowl as needed.
- Add the eggs and vanilla extract and beat until just combined.
- In a separate large bowl, whisk together the flour, sea salt, baking soda, and baking powder.
- Add the dry ingredients slowly in three batches, scraping down the edge of the bowl as needed, and mixing until combined. Fold in the chocolate chips.
- Scoop generous 2.5 tablespoon balls (1.5 inches in diameter) onto the baking sheet, leaving a good 2 inches between each. Sprinkle the top of each dough ball with flaky sea salt, if desired.
- Bake for 10-12 minutes, until golden brown around the edges and set in the middle.
- Transfer the cookies to a cooling rack to cool completely before enjoying.
Notes
- You can sub one kind of brown sugar instead of two.
- Store in an airtight container for up to a week. Or, store the dough or finished cookies in the freezer for up to a year.
